Titbits from the Dolomite Kitchen
Anyone who visits the Dolomites is delighted by the diversity of the cooking which combines the best of both the Italian and Austrian cuisines.
One of the most famous traditions in the Dolomites is the so-called “Törggelen” which takes place every autumn to celebrate the year’s first wine. Farmers open up their houses to serve traditional food which always consists of home-made sausages and smoked pork cutlets served with “Sauerkraut”, followed by roasted chestnuts and of course accompanied by the farmer’s new, still unfermented, wine.
Wine plays an important part in the Dolomite cuisine. There are many highly acclaimed wines but one which deserves a special mention among the red wines is the Teroldego Rotaliano Doc, called the "prince" of Trentino wines.
These wines are best enjoyed with one of the many local cheeses. For those interested in tasting both wine and cheese the annually held “Desmontegada” festivals are the ideal place. At the end of each summer the cows or goats are brought home from the mountain pastures resulting in a village celebration with tastings of mountain dairy cheeses accompanied by the best wines of Trentino.
